I'm so excited to share the recipe for SMASH Chilli Chicken – a dish that is so easy to make and really packs in the flavour. This is a tasty, healthy, cost-effective alternative to takeaway and will become a regular in your meal plan.

Ingredients:
- 500g Chicken Fillets
- 9g Coconut Oil
- 1 Tablespoon Smoked Paprika
- 1 Tablespoon of Chilli Flakes
- 1/2 Tablespoon Oregano
- 2 Tablespoon SMASH Sweet Chilli Jam
- Sprinkling of Sesame Seeds
You will need:
- Weighing scales
- Chopping board
- Sharp knife
- Measuring spoons
- Frying pan
- Wooden spoon
Instructions:
- Using the sharp knife, cut the chicken fillets into small chunks.
- Place the coconut oil into the frying pan and heat.
- Once the oil is hot, add the chicken to the pan and turn down the heat a little bit
- Add the Smoked Paprika, Chilli Flakes and Oregano
- Fry for 3 minutes and stir
- Fry for a further 7-10 minutes until cooked through, stirring occasionally
- Turn down the heat and add the chilli jam and stir in and simmer for another 2 minutes. Make sure that it doesn’t burn.
- When it has caramelised a bit, add a small splash of water and simmer for 2 minutes
- Serve with a sprinkling of sesame seeds
Notes:
This is gorgeous with a salad or can be used as the basis of a chilli chicken pasta bake.
Also beautiful with spiralised courgette/carrot/sweet potato.
Tasty hot or cold.
