SMASH Chicken Goujons

Today, I'm excited to share our recipe for homemade SMASH Chicken Goujons that are not only packed full of protein and flavour but also free from inflammatory seed oils.

These crispy, succulent strips of chicken are perfect for a quick week night dinner, in a salad, wrap or a even as a grab and go healthy snack. Using simple ingredients you can grab at any supermarket, SMASH Chicken Goujons are a delicious, healthy meal that your whole family will love.

Ingredients:

  • 500g Chicken Fillets
  • 75g Porridge Oats
  • 50g Raw Almonds
  • 50ml Frank’s Hot Sauce
  • 1 Teaspoon Cayenne Pepper
  • 1 Teaspoon Chilli Flakes
  • 1 Teaspoon Paprika
  • Black Pepper to taste

You will need:

  • Weighing scales
  • Measuring spoons
  • Glass bowl
  • Chopping Board
  • Sharp Knife
  • Nutribullet/blender
  • Baking Tray
  • Tongs
  • Fork
  • Plastic Bag or separate bowls

Instructions:

  • Turn the oven on to 200°
  • Using a sharp knife, cut the chicken fillets into stripes and place them in the glass bowl.
  • Cover the chicken strips with the Franks Hot Sauce and leave to marinade for 2 hours
  • Blitz the porridge oats and almonds in the nutribullet or blender to make a fine flour.
  • Put the flour either in a bag or on a plate, add in the seasoning and mix together
  • Add half of the chicken strips to the bag/plate and coat with the seasoned flour. If in the bag, just give it a good shake. If using the plate method, use a fork to turn the chicken until it is totally covered.
  • Place the covered chicken strips onto the baking tray
  • Repeat the above steps with the rest of the chicken
  • Place the tray of chicken in the oven and cook for 20 minutes or until cooked through and crispy
  • Whilst the chicken is cooking, prep a healthy salad.

Notes:

Don't panic about Franks Hot Sauce - it is not hot when used as a marinade!
These are delish with the SMASH Chilli Jam
Fabulous on a salad the next day too - so make plenty.
