SMASH Chicken Fried Rice is a delicious dish that is not only easy to make but also a fantastic way to use up leftover roast chicken from Sunday lunch, transforming it into a meal that's both economical and packed with protein.

Unlike traditional chicken fried rice, the SMASH version avoids inflammatory seed oils, and MSG, using healthier cooking oils and cooking methods that enhance the flavours and nutrients. Perfect for a quick weeknight dinner or a satisfying lunch, this SMASH Chicken Fried Rice is a tasty, budget-friendly solution that’s sure to become regular fakeaway.

Ingredients:

  • 9g Coconut Oil
  • 150g Onion
  • 130g Mushrooms
  • 350g Cooked Chicken
  • 190g Frozen Peas
  • 20ml Reduced Salt Soy Sauce
  • 30ml SMASH Chilli Jam
  • 2 Eggs
  • 110g Cooked Brown Rice

You will need:

  • Weighing scales
  • Measuring spoons
  • Chopping board
  • Sharp knife
  • Frying pan
  • Wooden spoon
  • Cup
  • Fork
  • Bowl

Instructions:

  • Chop the onion in half and slice length ways to have long slices of onion and slice mushrooms finely
  • Heat the the oil and once it is hot, add the chopped mushrooms and onions and fry off
  • Whilst they are frying, slice the cooked chicken up and add to the pan
  • Add the Soy Sauce and a splash of water
  • Add in the frozen peas to the frying pan and cook for a minute
  • Add the cooked rice and chilli jam to the frying pan and stir all together.
  • Push the mixture to the sides and crack in the eggs and scramble vigorously. Once they are cooked mix through the rest of the pan
  • Reduce the heat slightly and cover with a lid. Cook for
  • 3-5 minutes to ensure everything is piping hot

Notes:

This is a brilliant dinner if you have left over Sunday roast chicken as the flavours in the brown meat of the chicken give the dish more flavour.
